Gourmet Cuisine by The Breakers

Posted on February 9, 2010

If you have never been to an event at the Breakers in Palm Beach you will want to once you feast your eyes on these colorful and mouth-watering dishes that we recently photographed at a special tasting.

Aside from the first rate ingredients used in each dish, there is much time and effort, not to mention, talent in creating the actual presentation to guests. Take, for example the Giant Martini Sundae. Once you look past the mountain of ice cream before you, below it sits a variety of sweet toppings all sitting in little chocolate cups. You can practically inhale the entire dessert with your eyes! But that wouldn’t be satisfying enough, now would it?

Such inventive appetizers as the South African lobster tail with zucchini and sweet corn pudding timbale, mini ahi tuna taco hors d’oeuvres with margarita shooters and corn fritters perched atop mini beer mugs are enough to make one beg for more. The surprise and delight of marrying alcohol with food, is done to perfection here. What better to go with ahi tuna tacos than a tasty margarita? Corn fritters with beer is way more sophisticated here than what you’d think.

The most beautifully presented and interesting appetizer in our opinion is the Red Delicious apple filled with Emmenthaler fondue. This scrumptious combination is both flavorful and enticing as the melted cheese sits inside the apple just waiting to be dipped into by an eager (and lucky) guest.

I have photographed many weddings at the Breakers and the cuisine is always served to perfection – no matter whether the hosts have selected chicken, beef, fish – each dish is delectable and exquisitely plated. Cuisine at the Breakers is more than just about the food – it is art unto itself. Masterfully created, deliciously designed and standalone in quality, the Breakers cuisine never fails to tempt and titillate all the taste buds in the room.

The many tastes from Sam & Elisa's wedding weekend at the Trapp Lodge

Posted on June 4, 2009

Food photography is one of my specialties and I just couldn't resist photographing the many colorful and tasty meals and appetizers that were served over the course of Sam and Elisa's wedding weekend. The staff at the Trapp Family Lodge was extremely helpful in making sure that I had a plate to photograph right as the food came out of the kitchen. I managed to photograph the appetizers and other stations before the 300 guests had a chance to dig in!

BELOW: Spinach and Leek Stuffed Quail with Cardamom Couscous Quinoa Pilaf and Tarragon Thyme Jus

BELOW: Seared Lamb Loin over Braised Lentils with an Apricot Lardon Chutney, Baby Carrots and Haricot Verts with a Lamb Jus

BELOW: The best Lamb Chops I've ever sampled!

BELOW: One taste will tell you these are not your ordinary bacon wrapped scallops.

BELOW: Tomato Artichoke Soup with Basil Oil and Micro Greens

BELOW: Seared Halibut with Eggplant, Green Olive and Sundried Tomato Tapanade, Peral Conscous Risotto with a Cucumber Tomato Avocado Relish

BELOW: Very tasty mini salmon burgers.

Huge shrimp cocktail - yum yum!

Sushi is one of our favorites!

This amazing selection of cheese and fruit was offered at the wedding reception.

An Appetizing Wedding at the Ritz-Carlton Key Biscayne

Posted on January 27, 2009

Anisha and Neil got married on December 18 at the Ritz-Carlton Key Biscayne. Elda Brouwer, the Director of Catering at the Ritz-Carlton, helped put together a sumptuous menu of Grilled Filet Mignon, Chilean Sea Bass and Seared Cocoa Dusted Scallops. The wedding cake was a sleek buttercream cake with alternating chocolate and strawberry layers adorned with yellow tulips. Accompanying it for the sweet tooth inclined was a dessert of Passion Banana Chocolate Mousse Dome accented with drops of Cinnamon Cream Anglais. It was a delicious as it looks and sounds. The table décor was done by Robert Torres of Grande Affairs in Miami.

Fabulous Food at The Ritz-Carlton Palm Beach

Posted on December 19, 2008

Some times it’s about the wedding dress, sometimes it’s about the view; but for Michelle and Brian it was all about the food. This delightful couple was so excited about the food that the Ritz- Carlton Palm Beach was preparing for their November wedding that they definitely wanted to be sure I got the shots. In fact, by Michelle’s request, Danielle M. Sir Louis, the wedding planner at The Ritz Carlton got me special permission to photograph the chef as he plated the entrée’s. I have to tell you the aroma of the Herb Roasted Chicken, Citrus Glazed Mahi-Mahi and the Truffled Potatoes had even me impressed.
